So, in practical terms:

60° = narrower, sharper V-groove.
90° = wider, more open V-groove.

Neither is universally better — the correct angle depends on the visual effect and scale of the carving.

A standard V-tool is primarily designed for lighter carving. A heavy-duty V-parting tool has to cope with substantially greater force.
